Peanut Butter Banana Protein Fluff

A few months ago I learned about a new healthy treat called protein fluff. Basically you take some whey protein powder and throw it in a food processor with a small amount of the milk of your choosing and some frozen fruit.

I used 1 scoop of vanilla whey protein, 50 mL of almond milk, and 1 frozen banana (cut into pieces). Put it in the food processor and pulse a few times then just turn it on. Let it whirl for about 3-4 minutes. After a minute or two you will see the mixture start to gain volume and fluff up – keep going for about a total of 3-4 minutes or longer if you can stand it.

If you want to be really fancy, you can add a sprinkle of xanthan gum right after you pulse a few times. It will help to thicken/fluff things up. Just a bit though! Too much and you will have a slimy, gummy mess.

The protein fluff below is topped with some powdered peanut butter and sprinkles. Sprinkles make everything more fun!
