Homemade Sweetened Condensed Milk

If you’re confused by that title, so was I. I had no idea that it was even possible to make sweetened condensed milk at home. But this stuff admittedly does taste better than the canned stuff.

I found the recipe in a recent issue of Fine Cooking and I was intrigued. I am a big fan of sweetened condensed milk and I’ll admit that sometimes I find recipes to make with it just so I can buy some and lick the spoon. So, making my own sounded fun & delicious.

The recipe only requires 4 ingredients: whole milk, heavy cream, sugar, and a pinch of salt. But what it does require is a bit of time as once the milk comes to a boil, you have to stir constantly for about 30 mins. But, just as the article said, it was a great time to catch up and watch some of my shows on my phone while stirring.

The resulting product is smooth and rich. And for some reason just feels more indulgent than canned… But maybe that’s just because there’s that feeling of pride in making it from scratch.

I plan to use most of this batch in a brownie recipe that is also in Fine Cooking magazine. The rest I’ll probably use in coffee (or just eat with a spoon).

Here is the recipe:

  • 4 cups whole milk (32 oz)
  • 3/4 cup heavy cream (6 oz)
  • 1 cup sugar (7 oz)
  • 1/8 tsp salt
  1. Weigh a 5 quart or larger pot, write that weight down.
  2. Combine ingredients in pot.
  3. Cook at a medium heat stirring occasionally until mixture simmers.
  4. Continue cooking, stirring constantly with a heatproof spatula to prevent milky buildup on sides and bottom of pot.
  5. Cook for 30-45 mins (keep stirring, this is not optional) until milk is thick and foams. Then keep cooking until foam subsides.
  6. Pull the pot off and weigh it an then subtract the weight of the pot. It’s done when the contents have reduced to 19 oz exactly (2 cups).
  7. Put in airtight container and refrigerate.
  8. Bring to room temp before using.

I don’t know that I’ll make this every time I need sweetened condensed milk, but if I have the time, I think it’s definitely worth it.
